Apricot and Cinnamon Cake

8 ozs. of Self Raising Flour

4 - 6 ozs Dried Apricots (chopped)

2 level teaspoons of Cinnamon

1 tablespoon Honey

4 ozs. of Butter

3 tablespoons of Milk

5 ozs. of Soft Brown Sugar

2 eggs beaten

Runny honey to glaze

 

Method

1. Line a 7 inch Cake tin

4. Mix honey and milk together and add to dry ingredients with eggs.

2. Combine flour and cinnamon. Rub in butter

5. Bake at gas mark 3 (325oF/160oC) for about 1 hour 20 minutes until firm

3. Stir in sugar and apricots

6. While warm brush top with runny honey
